Spiced Sweet Potatoes with Ginger and Pears

Ingredients
  • 2 lbs. sweet potatoes, cut into ½- to 1-inch chunks
  • 3 ripe pears, peeled, cored and diced
  • 2 tablespoons butter
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon ground cardamom
  • 2 teaspoons ginger, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Directions
  1. Fill Butterball® or Masterbuilt Fryer to the MAX fill line with water. Set to 375° F and bring to a boil. This will take approximately 15 to 20 minutes. Although cooking time on this recipe is short, water may need to be added if steamer is used for more than 60 minutes.
  2. Coat steamer basket with non-stick cooking spray and add the sweet potatoes. Using the drain clip, hook the basket onto the inner pot. (Note: Do not lower basket into water when steaming.)
  3. Cover and steam for 25 minutes, or until soft enough to mash.
  4. In a medium skillet, sauté pears, butter, cinnamon, and nutmeg until pears caramelize, about 2 minutes.
  5. Transfer steamed sweet potatoes to a large bowl and coarsely mash, adding cardamom, ginger, salt and pepper. Stir in the sauteed pears.
  6. Place the mixture into a shallow casserole, and bake in a pre-heated 350° F oven, until heated through, 15 to 20 minutes.
