Smoked Cherry Chicken

Ingredients
- 1 cup cherry preserves
- 1 tablespoon butter or margarine, melted
- 1/2 teaspoon grated lemon zest
- 2 tablespoons fresh lemon juice
- 1 1/2 teaspoons ground cinnamon
- Pinch salt
- Pinch ground cloves
- 2 to 2 1/2 pounds chicken quarters
Directions
- Preheat smoker to 225°F.
- In a medium bowl, combine cherry preserves, butter, lemon zest, lemon juice, cinnamon, salt and ground cloves.
- Brush marinade over chicken, reserving some marinade for basting during the cooking process.
- Place chicken in smoker and smoke for 1 1/2 hours, basting halfway through or until internal temperature reaches 165°F.
