Smoked Cherry Chicken

Ingredients
  • 1 cup cherry preserves
  • 1 tablespoon butter or margarine, melted
  • 1/2 teaspoon grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons ground cinnamon
  • Pinch salt
  • Pinch ground cloves
  • 2 to 2 1/2 pounds chicken quarters
Directions
  1. Preheat smoker to 225°F.
  2. In a medium bowl, combine cherry preserves, butter, lemon zest, lemon juice, cinnamon, salt and ground cloves.
  3. Brush marinade over chicken, reserving some marinade for basting during the cooking process.
  4. Place chicken in smoker and smoke for 1 1/2 hours, basting halfway through or until internal temperature reaches 165°F.
