Chicken Thighs with Salsa

Ingredients
  • 4 pounds chicken thighs, skin on
  • 1/4 cup chopped red onion
  • 1 tablespoon grated lemon zest
  • 1 teaspoon ground cumin
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh corn kernels
  • 1 large tomato, seeded and diced
  • 2/3 cup chopped red onion
  • 1/2 cup cilantro. chopped
  • 2 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon cumin
  • 1 jalapeno, seeded and minced
  • 1 avocado
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Directions
  1. Place chicken thighs in a resealable plastic bag. Add red onion, lemon zest, ground cumin, lemon juice, and olive oil.
  2. Seal and marinate in refrigerator for 3 to hours. Occasionally, turn bag to spread marinade evenly.
  3. Set grill to 375 degrees (medium to high setting). Remove chicken from marinade; reserve for basting.
  4. Sprinkle chicken with salt and pepper. In a small saucepan, bring marinade to a boil.
  5. Grill chicken for 12 minutes per side or until internal temperature reaches 165 degrees, basting occasionally with marinade. Remove from grill and serve with salsa.
