Smoked Egg Salad Sandwiches

Ingredients
  • 8 smoked eggs
  • 1/2 c mayo
  • 1 tsp spicy mustard
  • 1/4 c chopped scallions
  • 1/4 c smoked paprika
  • Salt and pepper to taste
Directions
  1. Smoke 8 raw eggs in the shell @ 225° for 2 hours. Roll heavy smoke the entire time because the smoke is mild inside the shell.
  2. The smoke flavor gets stronger if you leave them in the shell for a few days before peeling.
  3. Mix together chopped smoked eggs with other ingredients.
  4. It's great on brioche buns or hawaiian rolls. It also works great on pulled pork sandwiches
