Smoked Stuffed Salmon

Ingredients
- 4-5 pounds Salmon (drawn)
- 3 tablespoons oil
- ¼ cup green onions, chopped
- 1 cup tomato, peeled and chopped
- ¼ cup fresh dill, chopped
- ½ cup dry bread cubes
- ¼ cup celery, chopped
- ¼ teaspoon salt
- ½ teaspoon lemon pepper
- 1 garlic clove, minced
- Suggested wood for smoking: Hickory chips
Directions
- Prepare salmon and brush with oil.
- Combine remaining ingredients in a small bowl. Stuff salmon with mixture.
- Place salmon on a sheet of heavy aluminum foil that has been doubled and greased. Place in pre-heated smoker at 225 degrees and cook for about 3 to 4 hours.
