Honey Cumin BBQ Pork Packets

Ingredients
- ½ cup barbeque sauce
- ¼ cup honey
- 2 tsps ground cumin
- 4 pork boneless rib or loin chops, ¾ to 1 inch thick
- 2 large ears corn, each cut into 6 pieces
- 1 cup baby carrots cut lengthwise in half
- 2 cups refrigerated cook new potato wedges
- 2 medium green onions, sliced
Directions
- Heat coals or gas grill for direct heat.
- Cut four 18x12 inch pieces of heavy-duty foil. Spray each piece with cooking spray.
- In small bowl, mix barbeque sauce, honey and cumin.
- Place 1 pork chop, 3 pieces corn, ¼ cup carrots, ½ cup potato wedges and 1 ½ tsps green onion on center of each sprayed foil piece; sprinkle each with ¼ tsp salt.
- Spoon 3 tbsp sauce mixture over pork and vegetables on each foil piece.
- Fold foil over pork and vegetables so edges meet. Seal edges, making tight ½ inch fold; fold again. Allow space on sides for circulation and expansion.
- Cover and grill packets over medium heat 15 to 20 minutes, rotating packets ½ turn after about 8 minutes, until pork is no longer pink in center and meat thermometer inserted in center reads 160 degrees F.
- Place packets on plates. Cut large X across top of each packet; fold back foil.
