Rustic Cedar Shrimp with Lemon Butter

Ingredients
  • 1 untreated cedar plank
  • Olive oil for coating, plus 2 tbsp
  • 1 lb shrimp, head on and in shell
  • 12 oz Southern Secrets Kickin Cajun Spice
  • 1 small red onion, thinly sliced
  • 2 Italian tomatoes, quartered
Directions
  1. Preheat grill. Oil the cedar plank on one side. Assemble the plank. Toss the tomatoes and onions with 1 tablespoon of the oil and Kickin Cajun spice.
  2. Lay out the tomatoes and onions on the cedar plank, making sure not to get too close to the edge. Toss the shrimp with the remaining oil, and season with Kickin Cajun spice.
  3. Spread the shrimp on top of the onions and tomatoes. Place in the center of the grill. Cover and cook for about 10 minutes. Serve with lemon butter.
