Smoked Pulled Pork

Ingredients
  • 8 lb. bone-in pork butt
  • 9 x 13 aluminum tray
  • 2 tablespoons coarse salt
  • 2 tablespoons black pepper
  • 1 tablespoons garlic powder
  • 1 tablespoons onion powder
  • 1 tablespoons chili powder
  • 1 tablespoons paprika
  • 1/2 tablespoon cayenne pepper
  • 4 tablespoons brown sugar
Directions
  1. Blend all ingredients together and completely cover the butt.
  2. Place in the aluminum tray - uncovered - and smoke for 1 hourper pound at 250 degrees F, or until internal temp reaches at 165 degrees F.
  3. Remove from smoker and strain the juice into a small bowl.
  4. Wrap the butt two times in foil.
  5. Inject about 1 to 2 ounces per pound of the juice into the butt, then wrap 4 more times.
  6. Place back on the smoker at 250 degrees for 1 hour per pound or until internal temp reaches at 195 degrees for pulled pork results.
