Alicia's Guacamole

Ingredients
  • 2 ripe avocados
  • Juice of 2 limes, divided
  • 2 Roma (plum) tomatoes
  • 2 tablespoons chopped red onion
  • 2 tablespoons fresh chopped cilantro
  • 1/8 teaspoon garlic powder or to taste
  • 1/8 teaspoon kosher salt or to taste
Directions
  1. Cut each avocado lengthwise and remove seeds.
  2. Spoon out avocado flesh and place in a bowl.
  3. Squeeze half of the lime juice over avocado and chop with a spoon so mixture remains chunky.
  4. Slice Roma tomatoes lengthwise.
  5. Remove and discard seeds and membranes.
  6. Chop tomatoes.
  7. Add chopped tomatoes, red onion and fresh cilantro to avocado and stir gently to mix.
  8. Pour remaining lime juice over the mixture.
  9. Add garlic powder and kosher salt sparingly to taste.
