Caribbean Flavored Chicken

Ingredients
  • 1 teaspoon salt
  • 1 clove garlic, peeled, plus 2 cloves, minced
  • 1 1/2 teaspoons dried leaf oregano
  • 1/4 teaspoons paprika
  • 1 tablespoons lemon or lime juice
  • 8 chicken pieces (breast, thighs, drum sticks)
  • 3 tablespoons oil
  • 1 small onion minced
  • 1/3 catsup
  • 1/3 cup cider vinegar
Directions
  1. Mash salt with peeled garlic to make paste.
  2. Work in 1 1/2 tsp oregano, paprika and lemon juice.
  3. Rub this mixture over the chicken.
  4. Place the chicken over hot coals and grill, turning every 7 to 8 minutes, until done.
  5. Stir in catsup, vinegar and remaining oregano, and skimmer 15 minutes.
  6. When chicken is done, brush on chicken and grill 5 minutes longer.
  7. Place onto a warm platter and serve remaining sauce at table.
  8. Fried plantain or grilled-baked bananas or saffron rice go well with this.
