Chicken Thighs with Salsa

Ingredients
- 4 pounds chicken thighs, skin on
- 1/4 cup chopped red onion
- 1 tablespoon grated lemon zest
- 1 teaspoon ground cumin
- 1/4 cup fresh lemon juice
- 3 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh corn kernels
- 1 large tomato, seeded and diced
- 2/3 cup chopped red onion
- 1/2 cup cilantro. chopped
- 2 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon cumin
- 1 jalapeno, seeded and minced
- 1 avocado
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- Place chicken thighs in a resealable plastic bag. Add red onion, lemon zest, ground cumin, lemon juice, and olive oil.
- Seal and marinate in refrigerator for 3 to hours. Occasionally, turn bag to spread marinade evenly.
- Set grill to 375 degrees (medium to high setting). Remove chicken from marinade; reserve for basting.
- Sprinkle chicken with salt and pepper. In a small saucepan, bring marinade to a boil.
- Grill chicken for 12 minutes per side or until internal temperature reaches 165 degrees, basting occasionally with marinade. Remove from grill and serve with salsa.
