Greek Chicken Packets

Ingredients
- 4 (6 to 8 ounces) boneless skinless chicken breasts, halved
- 1 teaspoon Greek seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 (14 ounce) can quartered artichokes, drained
- 1 pint grape tomatoes, halved
- ¹/? cup pitted kalamata olives, halved
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 4 small sprigs fresh oregano
- ¼ cup crumbled feta cheese
Directions
- Fill Butterball® or Masterbuilt Fryer to the MAX fill line with water. Set to 375° F and bring to a boil. This will take approximately 15 to 20 minutes.
- Although cooking time on this recipe is short, water may need to be added if steamer is used for more than 60 minutes.
- Using aluminum foil, cut 4 (15-inch) squares; fold in half to make a crease and open up. Place chicken over the seam in center of foils.
- Sprinkle evenly with Greek seasoning, salt, and pepper. Top with artichokes, tomatoes, and olives. Drizzle evenly with olive oil and lemon juice.
- Place a sprig of oregano on top of each piece of chicken. Fold aluminum foil over the chicken mixture to create an air-tight packet.
- Place packets in steamer basket, and hook basket with drain clip on inner pot. (Note: Do not lower basket into water when steaming.)
- Cover and steam 30 to 35 minutes, or until chicken is tender. Carefully open packets and sprinkle with feta cheese, then reseal until it is time to serve.
