Lemony London Broil

Ingredients
  • 1 1-½ lb flank steak
  • 1 tsp finely shredded lemon peel
  • ½ cup lemon juice
  • 2 tbsp sugar
  • 2 tbsp soy sauce
  • 2 tsp snipped fresh oregano, or ½ tsp dried oregano crushed
  • 1/8 tsp black pepper
Directions
  1. Trim the fat from steak. Score steak on both sides by making shallow cuts at 1-inch intervals in a diamond pattern.
  2. Place steak in a plastic bag set in a shallow dish. For marinade, combine the lemon peel, lemon juice, sugar, soy sauce, oregano and pepper.
  3. Pour over steak, seal bag. Marinate in refrigerator for 2-24 hours turning bag occasionally.
  4. Drain steak preserving the marinade. Grill steak on an uncovered grill directly over medium heat for 17-21 minutes for medium, turning and brushing marinade once over the steak halfway through cooking.
  5. To serve thinly slice steak diagonally across the grain.
