Orange Roughy

Ingredients
  • 1 to 1 ¼ pounds fresh or frozen orange roughy fillets
  • 1 medium onion, sliced
  • ¼ teaspoon garlic
  • 4 celery stalks, leafy ends only
  • Flavored butter or salsa (optional)
Directions
  1. Preheat fryer to 250 degrees, and set up for steaming.
  2. Thaw fish if frozen. Rinse fish and pat dry with paper towels. Cut into 4 serving size pieces. Measure thickness of fish, and set aside.
  3. Arrange onion slices in the bottom of a steamer basket. Place fish on top of onions and season to taste with garlic salt and a dash of black pepper. Place in steamer. Place celery on top of fish.
  4. Allow 4-6 minutes per ½ inch thickness of fish, or until fish flakes easily when tested with a fork. Discard vegetables and serve with favorite garnish.
