Orange Roughy

Ingredients
- 1 to 1 ¼ pounds fresh or frozen orange roughy fillets
- 1 medium onion, sliced
- ¼ teaspoon garlic
- 4 celery stalks, leafy ends only
- Flavored butter or salsa (optional)
Directions
- Preheat fryer to 250 degrees, and set up for steaming.
- Thaw fish if frozen. Rinse fish and pat dry with paper towels. Cut into 4 serving size pieces. Measure thickness of fish, and set aside.
- Arrange onion slices in the bottom of a steamer basket. Place fish on top of onions and season to taste with garlic salt and a dash of black pepper. Place in steamer. Place celery on top of fish.
- Allow 4-6 minutes per ½ inch thickness of fish, or until fish flakes easily when tested with a fork. Discard vegetables and serve with favorite garnish.
