Pork Dumplings with Sweet Soy Dipping Sauce

Ingredients
  • 2 cloves garlic
  • 1 (2-inch) piece fresh ginger root, peeled
  • 2 green onions, quartered
  • ½ cup red bell pepper, cubed
  • ½ lb. ground pork
  • 1 tablespoon soy sauce
  • 2 teaspoons dark sesame oil
  • 32 wonton wrappers
  • 4 to 6 cabbage leaves
  • 2 tablespoons ginger root, peeled and minced
  • ²/? cup soy sauce
  • 2 tablespoons dark sesame oil
  • ¼ cup rice vinegar
  • ¼ cup firmly packed brown sugar
  • ¼ to ½ teaspoon crushed red pepper
Directions
  1. Combine garlic, ginger, green onions and red bell pepper in a food processor; pulse until minced. Add pork, soy sauce, and sesame oil. Pulse until mixture is well combined.
  2. Drop mixture by heaping teaspoonfuls onto centers of wonton wrappers. Brush edges of wrappers with water. Gather corners of wrapper together to form an “x” crimping sides to seal.
  3. Repeat process with remaining wrappers, covering dumplings with damp paper towels as you make them so they don’t dry out. Makes approximately 24 dumplings.
  4. Meanwhile, fill Butterball® or Masterbuilt Fryer to the MAX fill line with water. Set to 375° F and bring to a boil. This will take approximately 15 to 20 minutes.
  5. Although cooking time on this recipe is short, water may need to be added if steamer is used for more than 60 minutes. Line the steamer basket with cabbage leaves. Place half of wontons in one layer in basket.
  6. Cover and steam 8 to 10 minutes. (Note: Do not lower basket into water when steaming.) Repeat with second batch. Serve warm with Sweet Soy Dipping Sauce.
  7. Sweet Soy Dipping Sauce: In a small bowl, combine all sauce ingredients. Makes about 1 cup.
