Smoked Beef Filets

Ingredients
- 4 pounds beef filets
- 2 tablespoons olive oil
- 4 garlic cloves, crushed
- Kosher salt
- Ground pepper
- Suggested wood for smoking: Mesquite or cherry chips
Directions
- Preheat smoker to 225 degrees.
- Season meat with garlic cloves, salt and pepper. Heat olive oil in large frying pan. Sear/brown meat on all sides. This will seal in juices before smoking.
- Wrap each fillet in heavy aluminum foil leaving the tops of each uncovered. Sprinkle a little olive oil on top of each filet.
- Place foil wrapped filets in the smoker and cook for approximately 1 to 1 1/2 hours for medium-rare. The cook time will depend on the thickness of the filet.
- Allow for longer cooking time for medium and well-done. Carefully monitor the internal temperature of the meat.
