Smoked Beef Filets

Ingredients
  • 4 pounds beef filets
  • 2 tablespoons olive oil
  • 4 garlic cloves, crushed
  • Kosher salt
  • Ground pepper
  • Suggested wood for smoking: Mesquite or cherry chips
Directions
  1. Preheat smoker to 225 degrees.
  2. Season meat with garlic cloves, salt and pepper. Heat olive oil in large frying pan. Sear/brown meat on all sides. This will seal in juices before smoking.
  3. Wrap each fillet in heavy aluminum foil leaving the tops of each uncovered. Sprinkle a little olive oil on top of each filet.
  4. Place foil wrapped filets in the smoker and cook for approximately 1 to 1 1/2 hours for medium-rare. The cook time will depend on the thickness of the filet.
  5. Allow for longer cooking time for medium and well-done. Carefully monitor the internal temperature of the meat.
