Smoked Egg Salad Sandwiches

Ingredients
- 8 smoked eggs
- 1/2 c mayo
- 1 tsp spicy mustard
- 1/4 c chopped scallions
- 1/4 c smoked paprika
- Salt and pepper to taste
Directions
- Smoke 8 raw eggs in the shell @ 225° for 2 hours. Roll heavy smoke the entire time because the smoke is mild inside the shell.
- The smoke flavor gets stronger if you leave them in the shell for a few days before peeling.
- Mix together chopped smoked eggs with other ingredients.
- It's great on brioche buns or hawaiian rolls. It also works great on pulled pork sandwiches
