Smoked Stuffed Salmon

Ingredients
  • 4-5 pounds Salmon (drawn)
  • 3 tablespoons oil
  • ¼ cup green onions, chopped
  • 1 cup tomato, peeled and chopped
  • ¼ cup fresh dill, chopped
  • ½ cup dry bread cubes
  • ¼ cup celery, chopped
  • ¼ teaspoon salt
  • ½ teaspoon lemon pepper
  • 1 garlic clove, minced
  • Suggested wood for smoking: Hickory chips
Directions
  1. Prepare salmon and brush with oil.
  2. Combine remaining ingredients in a small bowl. Stuff salmon with mixture.
  3. Place salmon on a sheet of heavy aluminum foil that has been doubled and greased. Place in pre-heated smoker at 225 degrees and cook for about 3 to 4 hours.
