Smoked Tuna

Ingredients
  • 4 tuna steaks (1” thick)
  • 1 1/8 cup sugar
  • 3/8 cup salt
  • 1 teaspoon pepper
  • ¼ teaspoon garlic (granulated)
  • ¼ teaspoon prague powder #1
  • 1 cup honey
  • 1 gallon water
  • Suggested wood for smoking: Hickory or apple chips
Directions
  1. Mix above ingredients until dissolved in water.
  2. Place in pre-heated smoker at 140 degrees and cook for about 7 hours using water mixture in water pan.
