Shirley's Salmon Patties

Ingredients
  • 1 gallon cooking oil
  • 2 pounds fresh salmon
  • 3/4 cup chopped yellow onion
  • 2 eggs, well beaten
  • 2 teaspoons Cajun seasoning
  • 1/8 teaspoon cracked black peppercorns
  • 1/3 cup Ken’s Steakhouse Greek Dressing
  • 1 sleeve saltine crackers, crushed
Directions
  1. Fill deep fryer halfway with oil and heat to 350°F.
  2. Remove skin from salmon and chop in a food processor or with a knife; do not overprocess. In a large bowl, combine salmon, onion, eggs, Cajun seasoning, cracked peppercorns and Greek dressing.
  3. Using a 1/3 cup measure for each patty, shape mixture into 6 patties and roll each in crushed crackers.
  4. Place in fryer, turning once, and fry for 2 1/2 to 3 minutes or until patties are golden brown and float to the top. Use a metal slotted spoon to transfer to paper towels to drain. Serve with your favorite sauce.
