Tonya's Green Beans with Chipotle Dipping Sauce

Ingredients
  • 1 cup all-purpose flour
  • 1/2 to 1 teaspoon kosher salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup club soda
  • 2 teaspoons olive oil
  • 3 cups fresh green beans, ends trimmed
  • 1 gallon cooking oil Chipotle Dipping Sauce
  • 2/3 cup sour cream
  • 6 tablespoons mayonnaise
  • 6 tablespoons fresh lime juice
  • 2 tablespoons canned chipotle peppers
  • 2 cloves garlic, minced
  • 1/2 teaspoon chipotle
Directions
  1. In a large bowl, combine flour, salt to taste, baking powder and baking soda. Add club soda and olive oil, mixing well.
  2. Fill deep fryer halfway with oil and heat to 350°F.
  3. Chipotle Dipping Sauce: In a food processor, blend together sour cream, mayonnaise, lime juice, chipotle peppers, garlic and chili powder until smooth.
  4. Dip green beans in batter mixture. Fry green beans for 2 minutes or until golden brown. Use a metal slotted spoon to transfer to paper towels to drain. Serve immediately with sauce.
