Bacon Wrapped Oysters

Ingredients
  • Oil for frying
  • 2 quarts (4 to 5 dozen) fresh shucked oysters
  • 1 1/2 packages (16-ounce) smoked bacon
  • Wooden toothpicks
  • 2 cups cornmeal
  • 2 tablespoons Cajun Injector® Quick Shake™ Seasoning
Directions
  1. Preheat oil to 400º F in electric fryer or 350º F in propane fryer.
  2. Drain oysters.
  3. Cut each bacon strip into thirds.
  4. Wrap each oyster with a piece of bacon.
  5. Secure with a wooden toothpick.
  6. Combine cornmeal and Quick Shake™ Seasoning; stir well with a whisk.
  7. Dredge oysters in cornmeal mixture, coating all sides well.
  8. Refrigerate until ready to fry.
  9. Fry a few at a time for 1 1/2 to 2 minutes or until bacon is crisp.
  10. Remove from hot oil and drain on paper towels.
