Fried Lobster Tail

Ingredients
- Oil for frying
- 2 cups cornmeal
- ½ cup all-purpose flour
- Salt and pepper to taste
- 2 tablespoons Southern Secrets Kickin’ Cajun Spice
- 4 pounds fresh lobster tails in shell, cleaned and halved
Directions
- Preheat oil to 375º F in electric fryer.
- Combine cornmeal, flour salt, pepper and Southern Secrets Kickin’ Cajun Spice in a sealable bag. Shake well.
- Place one halved lobster tail at a time into bag. Shake well to completely coat tails.
- Fry 4 halved lobster tails at a time for 5-7 minutes until lobster turns white and the coating is slightly brown.
- Remove from hot oil and drain on paper towels.
