Fried Lobster Tail

Ingredients
  • Oil for frying
  • 2 cups cornmeal
  • ½ cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons Southern Secrets Kickin’ Cajun Spice
  • 4 pounds fresh lobster tails in shell, cleaned and halved
Directions
  1. Preheat oil to 375º F in electric fryer.
  2. Combine cornmeal, flour salt, pepper and Southern Secrets Kickin’ Cajun Spice in a sealable bag. Shake well.
  3. Place one halved lobster tail at a time into bag. Shake well to completely coat tails.
  4. Fry 4 halved lobster tails at a time for 5-7 minutes until lobster turns white and the coating is slightly brown.
  5. Remove from hot oil and drain on paper towels.
