Oil-free Fryer: Cornish Game Hens with Wild Rice

Ingredients
- 2 Cornish game hens
- 1/4 cup green onions, chopped
- 3 tablespoons butter
- 1 cup wild rice, cooked
- 1/4 cup pecans or walnuts, chopped
- 1/2 cup lime marmalade
- 1/4 cup orange juice
- Salt
Directions
- Rinse and pat dry each hen. Season cavities with salt. Saute onions in 1 tablespoon butter. Stir in rice and chopped nuts.
- Preheat oil-free fryer to 350 degrees. Stuff hens with rice mixture. Close with skewers or kitchen string. Melt remaining 2 tablespoons butter in small saucepan.
- Add marmalade and orange juice blending until smooth. Brush hens with marmalade mixture. Place hens in fryer and cook for 1-1.5 hours. Brush with remaining glaze before serving.
