Sesame Tempura Vegetables

Ingredients
- 1 gallon cooking oil
- 2 cups all-purpose flour
- 1/2 cup (2 ounces) sesame seeds
- 2 cups sparkling water
- 1/2 lb. green beans, whole
- 1/2 lb. zucchini, sliced into 1-inch strips
- 1/2 lb. broccoli, florets
- 1 1/2 lbs. parboiled sweet potatoes
- Salt and black pepper
- 2 tablespoons vegetable oil
- 4 tablespoons soy sauce
- 4 teaspoons fresh squeezed lime juice
- 2 teaspoons sugar
Directions
- Fill Butterball® Electric Fryer with oil. Heat to 375° F; this will take approximately 15 to 20 minutes.
- To make batter, whisk together flour, sesame seeds, and sparkling water in a large bowl, until batter is smooth and has no lumps.
- Toss about 10 vegetable pieces into batter and coat. Add vegetables to oil one at a time (to keep separate) and fry, turning them until golden, about 2 to 3 minutes.
- Transfer with tongs to paper towels to drain, and sprinkle with salt and pepper to taste. Coat and fry remaining vegetables in the same manner. Serve vegetables with dipping sauce.
- Soy Dipping Sauce: In a medium bowl combine oil, soy sauce, lime juice, and sugar, mixing well until sugar is dissolved.
